My kids are sausage-aholics! So, when we switched them over to a gluten free, dairy free, sugar free diet (that we follow as much as we can) we were very sad to find many gross ingredients in our favourite sausages! There was corn-syrup, sugar, dextrose, and MSG just to name a few. It wartime for a revamp! I like a good challenge, so rather than feeling defeated, it was time to hit the kitchen and find a gluten free homemade breakfast sausage recipe that was just as good….or better!
First, I tried several different recipes. They were all good, but each of us liked a different one the best. I loved the one with chopped fresh garlic added and also one with poultry seasoning added. However, the boys favoured the saltier less herbed versions.
I’ve been buying the family packs of ground pork and bagging them in 1 lb. chunks in ziplock baggies with the spices for future use. 1 baggie of meat will make about 2 meals for us if we don’t have any extra company. I also found these awesome Slider sized hamburger presses that are great for making the patties ahead of time for freezing!

A sweet and savoury breakfast sausage that pairs well with eggs or pancakes and even as a stand alone.
This is the recipe that I adapted to our liking.
Note: I sometimes add 1/2 grated apple to this recipe making it a crossover (XO) as I am still nursing and find I need to add in more cross overs than before.
1 lb. ground pork
One small onion, grated of finely diced
1 clove garlic, finely diced
1 tsp salt
1/4 tsp pepper
1/4 tsp dried rosemary, ground
1/2 tsp dried thyme
1/2 tsp dried parsley
1 tsp sage
1/8 tsp nutmeg
1/2 cup of water or stock
