I LOVE pancakes!  It has taken me a long time to become a lover of pancakes again.  Growing up, my younger brother was incredibly picky.  But, one thing he loved was pancakes.  So my sweet mother made pancakes A LOT!  I remember periods of eating pancakes like every day!  I had acquired a deep seated hatred for pancakes by the time I hit early adult hood.

My love for pancakes really was more about the beautiful butter smothered in sweet maple syrup that topped all the pancakes I ate.  When I started THM about 2 1/2 years ago the one thing that would break me from time to time was the desire for pancakes.

Well, I’m glad to tell you that now you can have your cake (your pancake….) and eat it too!  Today my family and I enjoyed a beautiful THM (S) breakfast of pancakes and sausages.

Both of these recipes are adapted from other recipes that I started out using, but adapting to our families tastes and to make them a little more THM friendly.

I still have maple syrup in the house as a treat for the kids and to use myself on the odd occasion (little Lou doesn’t always do well with the other sweetners like Stevia or Truvia).  But, this morning we were out of maple syrup so I decided to create a concoction to top our pancakes.

We have been experimenting a lot with almond pancakes.  Mickey blue has become a bit picky in his toddler days, but he is a carb addict so I’ve been trying to find “carbs” that i can get some more protein into for him – hence the almond pancakes.  Sweet deal for me because almond flour can be used in an S setting for THM (Trim Healthy Mama) meals.

The batter is a good consistency, but these pancakes don’t really bubble up when they are ready to flip the way regular pancakes do, so you need to watch them!  I flipped mine a little early so they aren’t super pretty, but I was flipping one handed while holding the baby in my dominant arm.

To round off our meal I also heated up the left over breakfast sausage from the day before.  Since taking the kids off gluten, dairy, and sugar (as much as feasibly possible), I’ve been experimenting with different ways of making our own breakfast sausage patties.  These ones are an adaptation of a recipe for paleo breakfast sausages plus a few additions of my own.

This breakfast was so good it’s hard to believe you can lose weight and stay healthy eating like this!

I included the recipes below so that you can also enjoy this delicious breakfast.  What are your favourite breakfast foods?

Pancakes with fruit topping

  • Servings: 3-5
  • Time: 30 mins
  • Difficulty: easy

A delicious THM (S) breakfast that brings in all the awesomeness of a traditional breakfast meal without the weight gain.


Recipe makes 9 medium sized pancakes.


2 cups of almond flour
4 eggs
1/2 cup water
2 tsp truvia (instead of 1 tbsp of maple syrup)
1/2 tsp salt
coconut oil as needed for frying


  1. In a medium bowl, mix all ingredients.  Allow do sit for 5 minutes as almond flour absorbs the liquid.
  2. Heat a frying pan with a small amount of coconut oil.
  3. Cook on medium heat until edges of pancakes bubble and you are easily able to flip without the pancake being floppy.  Allow other side to brown up.
  4. Serve and enjoy!
  5. *CORRECTION to the original recipe:

    This recipe can also be made using freeze dried fruit that has been rehydrated, but this topping becomes an (E) making the meal a crossover (CO)

Topping Ingredients

Makes 4 servings

2 cups of fresh berries
1 1/4 cups of water (if using freeze dried fruit)
1 tbsp chia seeds
sweeter to taste (I used 2 tsp truvia)

Making the Topping

  1. In a small bowl place berries and crush.
  2. 2. Add chia seeds and sweetener.  Mix well.
  3. Allow 30 minutes or more for chia seeds to absorb liquid and thicken the topping.
  4. Serve and enjoy!
